Antioxidant activity The study shows that ginger oil possesses good antioxidant activity in peroxide, thiobarbituric acid, anisidine, linoleic acid system and DPPH radical test. It is believed that the presence of various types of compound such as phenolic group in ginger oil plays an important role in antioxidant activity. Antioxidant activity was tested by peroxide, thiobarbituric acid, anisidine, Radical scavenging and linoleic acid. ginger oil perform a good result in these experiments. The scavenging effects of phenolic compounds reduce the DPPH free radical. Hence, the presence of phenolic compounds such as eugenol, shogaols and zingerone in ginger oil may be responsible for their antioxidant properties. Moreover, the antioxidant activities observed in ginger could be due to the synergistic effects of two or more compounds present in them. The presence of the very complex mixture of various classes of organic compounds in ginger oil may produce the synergistic effects during lipid oxidation. Source: Singh, G., Kapoor, I. P. The study shows that the ginger oil completely(100%) inhibited F. moniliforme at 6 μL dose in food poison method, effectively inhibited P. vulgaris, P. aeruginosa and K. pneumoniae in agar well method and inhibited all the tested bacteria except E. coli. the remarkable antimicrobial activity may be due to the presence the phenolic compounds in ginger oil and the synergistic effects.
